Born and raised in a small, rural Texas town surrounded by great barbecue joints with deep traditions and long histories. In Texas barbecue circles, brisket is king, but there are plenty of places serving up ribs, chicken and sausages to die for. Most pit masters in Texas only season with salt and pepper, preferring to let the meat (and smoke) speak for itself. Many don’t offer barbecue sauce, and if they don’t, you’d better not ask for it!
Billy Bod has living happily in Pembrokeshire, West Wales for the past thirteen years, but still get homesick for true Texas barbecue. To quell his cravings, he’s regularly using his KJ in the back yard. Smoking meat takes all day, low and slow.
These spice blends are inspired by the barbecue he grew up loving. Tried and tested by family and friends. Each small batch is weighed and mixed by hand, using only the finest, all-natural ingredients.
